Pumpkin Payasam

This is a delicious sweet dish made using pumpkins. The ingredients needed are chopped yellow pumpkin, full cream milk, sugar, saffron, cardamom powder, ghee and roasted almond flakes for garnish.

To start with, cook the pumpkin in milk till it becomes soft. Next, use the mixer grinder to blend this mixture into a smooth puree. 

Transfer the puree to a pan and add in the saffron strands. Let the mixture simmer for 10-15 mins until it becomes thick. Mix in the cardamom powder and take it off the heat.

Paneer Barfi 

Take your paneer out and soak it in hot water for 30 minutes. Remove it and then pat dry. You can save precious time and use an electric kettle to heat the water needed for soaking the paneer. 

Next, cut the paneer into small pieces and blitz it in the mixer grinder to get a crumbly consistency. After this, knead it into a smooth dough while adding mawa and sugar in.

Line a tray with butter paper and transfer this mixture into it and spread it out evenly. You can garnish with nuts, cardamom and saffron. Cut the dish into pieces and refrigerate. Remove it once cooled and dig in. Simple, right?
